Pork Squash Casserole

I had some lovely yellow squash and decided to try another casserole of mine with a new meat.  So this was my dinner tonight. It’s basically my Ham-Squash Casserole, but I dropped the smoked ham and used diced, lean pork loin instead.   It came out real good and there’s not a single bite leftover.  Hubby REALLY like this dish.  Turmeric is used frequently in Middle Eastern and Indian foods, and I like to add a little to casseroles as it’s so very nutritious.  But it can be omitted if you don’t have any.  The nutritional info for this dish  is pretty impressing, so this dish is VERY good for you!  As is, this recipe is not suitable for Induction. But if you substitute heavy cream for the yogurt in this, the recipe is acceptable for Induction.  VARIATION:  substitute Mexican Seasoning for the 3 spices in this and it becomes a Mexican casserole!

INGREDIENTS:

1 T. olive oil or butter

1/4 c. celery, chopped

1½ oz. onion, chopped

2 oz. red bell pepper, chopped

9-10 oz. yellow squash, diced in ½” cubes

6 oz. diced lean pork (I used loin)

1/4 c. yogurt (or heavy cream, or mashed cauliflower)

Sprinkle of turmeric

3 oz. grated Cheddar Cheese

DIRECTIONS:

Preheat oven to 350º.  Chop celery, bell pepper and onion and saute in non-stick skillet in the 1T. oil until half tender.  Add diced pork and cook until no longer pink on the surface.  Add spices and squash and continue to saute until squash is just about done.  Turn off heat and stir in yogurt, mayo and cheese.  Pour into greased small casserole dish.  Bake in a 350º oven for about 30 minutes to meld the flavors.   I served this with some sauteed fresh spinach.
