Tuna Mini Muffins

This is actually a modification of Jacq’s recipe for Tasty Chicken Muffins.  I fixed it for lunch today and both of us gave it a thumbs up.    These were nice with a green salad.    If you like salmon, these would probably be good made with salmon.  This is an Induction friendly recipe.


7 oz. tuna packed in oil

4 eggs, beaten

2 oz. celery, finely minced

Dash black pepper

½ tsp. Seafood Spice Blend:  https://buttoni.wordpress.com/2009/08/20/my-seafood-spice-blend/

2 T. pimiento, chopped

3 oz. grated cheddar cheese

6 drops Tobasco

1 T. oil to grease muffin pan

DIRECTIONS: Combine all ingredients in a bowl and scoop with 1/4 c. measuring cup into 12 well-greased mini-muffin cups.  Bake at 350º for about 20-25 minutes or until centers are no longer wet.   Slide knife around outer edges to loosen.  Lift out of cups with a fork.

1.11 g  carbs

.14 g  fiber

.97 g  NET CARBS

7.55 g  protein

151 mg sodium
