Chicken Waldorf Salad

Now that I’m at the top of the OWL ladder, I can occasionally have a bit of fruit, but only allow myself to indulge a couple times a month.  I love to fix classic Waldorf Salad occasionally.   Of course, if you use mostly or all raw, peeled jicama diced for the apple, the carbs will be less, but a little apple really helps in taste and appearance.  So my nutritionals below reflect the apple as stated in the recipe.  With the apple, as written, this dish isn’t Induction friendly.  However, I made it with diced, jicama one time and it wasn’t half bad, if you want to try it that way.  🙂

INGREDIENTS:

1        13 oz. can chicken meat, well-drained and flaked apart

1        red apple, UNpeeled and diced

3/4 c. walnuts, coarsely chopped

1 c.      diced celery

¼ c.    homemade mayo

DIRECTIONS: Mix all ingredients in a mixing bowl with a spoon and serve in a pretty serving dish (over lettuce if you like).

551 cals, 44.9g fat, 11.9g carbs, 3.6g fiber, 8.3g NET CARBS, 31.6g protein, 152 mg sodium
