Smokey Gouda Brussel Sprouts

I created this tasty veggie dish that is a delicious way to prepare a vegetable that many do not like.  This is Induction friendly on Atkins as well.  We both really liked this, and I’m not particularly fond of Brussel sprouts.  This veggie dish is suitable for all phases of Atkins, Keto diets and Primal Blueprint as well.

14 oz. frozen Brussels sprouts

4 slices coarsely chopped bacon

2 oz. yellow onion, chopped

4 oz. smoked Gouda cheese, grated

DIRECTIONS:  Boil Brussels sprouts for 3 minutes.  Cut them in halves or smaller if you prefer.  In skillet, brown bacon.  Add chopped onion and saute together until onion caramelized.  Toss in the Brussels sprouts and stir, cooking for just a few minutes.  Transfer to baking dish if you prefer.  Top with grated cheese and bake at 350º for 15-20 minutes.  I’ve also done this dish without the bacon:

    • A very mild cheese similar to Edam if you’ve ever eaten that. If not, I’d personally compare it to Baby Bel cheese maybe? Creamy and smooth tasting, not sharp at all. But of course, the smoked variety is quite different tasting from the plain Gouda. You really just have to taste is yourself and judge whether you like it or not. I wouldn’t eat cheese, any kind really, when I was young, but Gouda was mild enough I would eat that one.🙂
