Ham-Squash Casserole

I threw this together for lunch today.  Came out quite tasty!  The yellow color here is because I sprinkled in a little turmeric, and do so anywhere I think it won’t be noticed too much.  It’s the spice that makes yellow mustard yellow!  It’s predominantly used in Indian and Middle Eastern food, but does not have too pronounced a flavor, so I sprinkle it in a lot of things for its nutritive value and as a natural anti-inflammatory as well.  Very good for you!  If you substitute heavy cream for the yogurt in this, the recipe would be OK for Induction.

INGREDIENTS:

1 T. olive oil or butter

1/4 c. celery

1½ oz. onion

2 oz. red bell pepper

9 oz. yellow squash, diced in ½” cubes

6 oz. diced smoked ham

1/4 c. yogurt (or heavy cream)

Sprinkle of turmeric (optional)

3 oz. grated American or Cheddar Cheese

DIRECTIONS:

Chop celery, bell pepper and onion and saute in non-stick skillet in the 1T. oil until half tender.  Add spices, diced ham and squash and continue to saute until squash is just about done.  Turn off heat and stir in yogurt and mayo.  Pour into greased glass dish and top with grated cheese.  Microwave on 70% power for 5-7 minutes and serve.

22.4 g  protein

1149 mg sodium (mostly from the ham and cheese)

  1. Just found and tried today. Great! used greek yogurt and punjab masala curry just because that is what I had on hand. worked great
