This simple Induction friendly dish came out real tasty. I’ve been experimenting with leeks a lot lately and find they add much to a dish, primarily sweetness, that plain old green onions cannot. This one is Induction friendly!
INGREDIENTS:
1 medium head cauliflower (5″-6″)
½ leek, washed well and sliced thinly
2 T. butter, unsalted
2 slices Deluxe American Cheese
1 c. grated cheddar cheese
DIRECTIONS: Cook cauliflower in water until tender. Drain well and set aside. Next, saute leeks in butter in non-stick skillet until done. Combine leeks with cauliflower and pour into baking dish. Top with two slices of American Cheese followed by the grated Cheddar. Microwave 10 minutes at 80% power. Or use a greased dish and bake in conventional oven at 350º for about 20-30 minutes.
