Tomato Mushroom Salad

1 portobello mushroom, cut into ¾” dice

3 T. olive oil

2 Roma tomatoes, seeded and chopped large

10 black olives, cut into halves or thirds

2 fresh basil leaves chopped

¼ c. green onion, chopped

1 tsp. yellow onion, chopped

1 T. balsamic vinegar

1 clove minced garlic

Sprinkle of black pepper and salt

DIRECTIONS: Saute cubed mushroom in olive oil with shallots and green onion.  Remove when mushroom is done and cool.  Add other ingredients and stir well.  Chill 30 minutes or so before serving.  Would be nice to serve in a lettuce leaf if for company.

NUTRITIONAL INFO: Makes 2 servings, each containing:

251 calories

23 g fat

10.7 g  carbs, 3.1 g fiber, 7.6 NET CARBS

3.75 g  protein

190 mg sodium

  3. As a person who is in the Atkins induction phase.. I don’t see how this is a plausible meal. It’s NEARLY HALF of your daily intake! Makes me sad.. going to book mark this for when I’m further along in the program and can afford to have that many carbs in a part of a meal.. but I was so looking forward to making this tonight..
