4 tsp. bacon grease
10 oz. fresh spinach
3 T. pumpkin seeds, (I buy shelled and roasted)
2 T. quality balsamic vinegar
DIRECTIONS: Melt bacon grease in non-stick skillet. Add spinach and saute, tossing until it is all soft and limp. Add salt and balsamic vinegar, toss and turn off heat. Plate and top with roasted pumpkin seeds. Goes nice with grilled steak or would be nice with grilled seafood.
