Balsamic Pumpkin Seed Spinach

I love balsamic vinaigrette on spinach salad, so I thought tonight, why not on COOKED spinach?  Well, it’s pretty darn good!  And done in just a couple minutes!  This recipe is not suitable until you reach the nuts and seeds level of Atkins Phase 2 OWL.  It is acceptable for Keto diets and Primal-Paleo as well.

4 tsp. bacon grease

10 oz. fresh spinach

3 T. pumpkin seeds, (I buy shelled and roasted)

2 T. quality balsamic vinegar

Pinch salt

DIRECTIONS:  Melt bacon grease in non-stick skillet.  Add spinach and saute, tossing until it is all soft and limp.  Add salt and balsamic vinegar, toss and turn off heat.  Plate and top with roasted pumpkin seeds.  Goes nice with grilled steak or would be nice with grilled seafood.
