Creamed Chicken on Eggplant

I made this for my husband’s lunch yesterday with a piece of chicken breast leftover from dinner the night before.  Me, I had a plain butter-seared chicken breast and veggie as I’m avoiding cream right now.  But I did taste this and it was quite good!  I got this idea from a recipe my Mom used to make called Eggplant Sandwiches, but that one was totally different  as it was Italian if flavor and had cheese and tomato sauce on it rather than a cream sauce.  This dish is Induction friendly.  For smaller servings, serve dipped on just one seared eggplant slice.  Then you should halve the nutritional information below if you make this 4 servings.

INGREDIENTS:

4    5/8″ slices eggplant (6 oz)

3 T. olive oil

4 slices bacon, chopped coarsely

6 oz. leftover cooked chicken meat, chopped

1 green onion, chopped

¼ c. heavy cream

1 c. water

Dash each salt and black pepper

Dash xanthan or guar gum to thicken

DIRECTIONS:   In a non-stick griddle or skillet, heat the olive oil over high heat and place eggplant slices on top.  Flip immediately so the eggplant will get coated with the oil.  Fry slices until done and golden (about 5 minutes).  In another non-stick skillet, brown the bacon.  When done, add green onion and chicken.  Lower heat and add water and cream.  When it is hot, sprinkle in a dash of xanthan gum to thicken slightly.  Stir well and heat a minute or so to allow the thickening to occur. Season with the salt and pepper.  To serve, dip up one piece of eggplant onto the plate.  Spoon about 1/3 c. sauce on top.  Place a second slice of eggplant on top and top with another spoon of the gravy.  Garnish with chopped parsley or slice of tomato.

    • Some groceries carry it I hear, but mine don’t. I have bought it in health food stores in some cities but have to order it from netrition.com now as the only health food store local doesn’t have it. Guar gum works just as well and Walmart carries that in the supplement area by the pharmacy.
