INGREDIENTS:
Juice of ½ lemon (about 2 T.)
1/3 c. coconut milk
1 clove garlic, minced
2 T. green onion, chopped
1 jalapeno, seeded and chopped
½ tsp. Chinese chile paste (Sambal Oelek or Sriracha)
Dash salt and black pepper
1 T. coconut oil (or olive oil)
1/3 c. parsley, chopped
1 c. cilantro chopped
OPTIONAL: For a creamier dressing, add ¼ c. homemade mayonnaise and ¼ c. sour cream. Be sure to add those numbers to those below (divided by 3 servings).
DIRECTIONS: Put all ingredients into blender or food processor and blend until smooth. Put in lidded jar and chill until ready to serve over nice green salads or a crisp jicama or cucumber salad.
