Baked Clams

This is a quick, light meal and is great with a nice green salad.  This mixture would also make a good filling for stuffed mushrooms.  It is an Atkins Induction friendly dish and is suitable for other Ketogenic diets. This dish is rich, so I like to serve it with a big bowl of mashed cauliflower.


1   6oz can of minced clams (12 fresh if you can get them)

¼ c. parsley

¼ tsp. oregano

2 T.  butter, softened

1 T. olive oil

1 clove garlic

2 T. grated Parmesan cheese

1 flax sandwich bun


Place all ingredients in food processor and pulse 2-3 times until all ingredients are well blended.  Pour onto greased quiche dish, spreading evenly.  You can use seafood baking shells if you have them.  Bake in microwave for 2 minutes on HI.
